@PhoxyShmoxy pointed you in the right direction. You need to:

  1. make a separate menu (type: Popup dialog),
  2. assign functions to the menu’s entries,
  3. then assign the menu as an entry to a regular pie menu, with these steps:

Press the little icon with the lines at the right of the pie menu entry that should contain the submenu, and choose Edit Item. To avoid confusion: in the screenshot the ‘Bump and Displacement’ menu is already assigned to the pie menu slot, but usually the slot is still empty.

Press the Menu button and choose the submenu you’ve created from the list:

Activate the Expand Popup Dialog option, then press OK to confirm:
